Preheat oven to 300 degrees. Cut away fat from ham, leaving about 1/4-inch of fat all around. Remove any tough skin. Using a sharp knife, score fat in a diamond pattern, being careful not to cut into the meat of the ham. Place ham, fattier side of up, on a roasting pan and roast on middle rack in oven. A good roasting guideline is about 15 minutes per pound with the final internal temperature at 140 degrees.

While ham is roasting, mix together of mustard, orange marmalade, brown sugar, rum, cider vinegar, and cornmeal. About halfway through the ham's roasting time, increase the oven temperature to 350 degrees and begin basting with the glaze at 15 minute intervals. If the sugar starts to burn on the bottom of the pan, add chicken stock to the pan.

When the ham has finished cooking, move it to a cutting board and let it rest for 15 minutes before carving. Deglaze the pan with the white wine and any remaining chicken stock. Reduce to make a sauce.
