Dijon-style mustard

Place all vegetables on sheet pan and roast for ten minutes till vegetables are soft then drain water from vegetables

place ground beef in mixing bowl and add all remaining ingredients, and add drained vegetables except for Horseradish, ketchup Dijon Mustard and brown sugar keep set aside for glaze

Take two bullet pans lined with parchment paper and place mixture in pans cover with foil and bake for 1 hour

while the meat loaf is cooking mix the ketchup, brown sugar, Dijon mustard and horseradish for glaze

after 1 hour of cooking take out meatloaf and uncover spread glaze on each meatloaf place back in oven for the remander of time until internal temp reaches 165

remove from oven and let rest for 10 minutes the slice into 6 oz portions.
