Pinto Beans With Ground Turkey 8 servings Calories 259 C This is a great dish to cook over the weekend and store for eating during the week, when I don't want to cook. It is low in Fat, high in Fiber. Great for any weight loss plan. But full of flavor. It can be a complete meal for around 300 calories

prepare dry pinto beans according to package. I use the quick soak method. After soaking, and risning add beans back to pan, add water according to package directions, less 1 cup of water, because you are adding liquid from the Rotel Tomatoes. Add 2 cans of Rotel Tomatoes, you can use 1 can if you dont like it real spicey. Cut up 1 onion, and 2-3 stalks of celery. (optional) 1/2 Bell Pepper, at this time. Cook covered, on low boil for 1 1/2 to 2 hours.

Cook 1 lb of Ground Turkey in a pan, till brown. Drain and pat any oil. Add turkey when the beans are almost done.

I like to put several serving up in individual servings for a meal to eat later in the week when I am too tired to cook.
